Chicken Salad

This is not so much a recipe as a way to use up stuff you happen to have in the fridge or on the shelf.  The only essential:  leftover chicken.




Happily, I had a leftover leg and roughly half a breast from a roasted chicken languishing in the fridge, as well as celery and apples. 
Ingredients (for two sandwiches)
a piece or two of leftover chicken
half an apple
a rib of celery
a handful of pecans, coarsely chopped
2 T mayonnaise
2 - 4 slices of bread, pita, or crossaints

Chop all ingredients, combine with mayo, spoon onto bread



It dawned on me after I had already eaten the sandwich that I had pecans on the shelf.  Definitely next time.
