Peanut Butter Oatmeal Chocolate Chip Cookies

Cookie perfection. I only make other kinds because sometimes one gets ever so slightly tired of peanut butter.


Adapted from the Better Homes and Gardens New! Cookbook, which has the greatest cookie recipes (sorry, Betty Crocker.)

1/2 c. butter, softened
3/4 c. peanut butter
1 c. sugar
1/2 c. packed brown sugar
1 t baking powder
1/2 t baking soda
2 eggs
1 t vanilla
1-1/4 c. all purpose flour
2 c. rolled oats (NOT the instant kind)
1 c. semisweet chocolate chips

1. In large mixing bowl, cream butter and peanut butter. Add sugars, baking powder, baking soda; beat until combined. Beat in eggs and vanilla. Beat in flour; stir in rolled oats and chocolate chips.

2. Drop dough by rounded teaspoons 2 inches apart on ungreased cookie sheet; bake at 375 for 10-12 minutes.

    I made these the other day and they are delicious (though, I regret not buying a bag of chocolate chips to put in them!) After I made them, I was thumbing through the cookie recipes in the BHG cookbook and noticed something funny. Hardly any of them call for salt. I always thought salt was an important cookie ingredient. I just thought it was mildly interesting to point out.

  2. Just saw this, a year and a half later... this has plenty of salt from the peanut butter. I'd have to look to see if the other recipes have similar salty goodness in another ingredient.
